MEXICAN Pizza

Ingredients
2 tsp oil
8 flour tortillas
1 lb. ground beef
1/4 cup cup taco seasoning
3/4 cup water
15 oz can refried beans, warmed
8 oz. bag Borden® Cheese - Monterey Jack Shredded Blend
2 roma tomatoes
3 green onions, green parts only

ADD the oil in a large skillet on medium heat. Once warmed, add the tortillas and fry until browned, about 2–3 minutes total, flipping once.

REMOVE he tortillas to a paper towel-lined plate and set aside.

PREHEAT the oven to 350º F.

STIR in the taco seasoning and water. Reduce the heat to a simmer and cook for another 5 minutes, stirring occasionally.

BUILD the pizzas by placing a tortilla on a baking tray. Cover the tortilla with a scoop of refried beans, followed by a scoop of seasoned meat, and enchilada sauce.

TOP with another tortilla and cover lightly with more enchilada sauce and the shredded cheese. Repeat with the remaining tortillas.

BAKE the pizzas in the oven until the cheese is melted and bubbly, about 10 minutes.

REMOVE and top with tomatoes and green onions. Serve.
