MASH
2 avocados in a bowl and season with salt, pepper and a squeeze of lemon.

SPREAD
the mashed avocado on two slices of bread. Place two or three tomato slices on top of the
avocado.

ADD
two slices of cheese to each sandwich. Top with the other slices of bread.

HEAT
butter in a skillet over medium heat. Place the sandwiches in the skillet and cook for 3-4
minutes per side, until the bread is golden and the cheese is melted. Allow to cool and enjoy!
